Steps
  1. subheading: To make the Tzatziki Sauce:
  2. Make the sauce first and as early as possible; to give the flavors time to blend. This REALLY tastes better the next day, no question. Grate the cucumber and squeeze all the juice out with your hand and set is aside on some paper towel or sit in a colander to further dry out.
  3. Blend together the tofu, garlic, lemon juice, vinegar, and salt & pepper.
  4. Stir in the cucumber and dill and put in fridge.
  5. subheading: To make the broth:
  6. Throw all the ingredients in a pot and bring to boil. Reduce heat and let simmer for 5 minutes.
  7. Put in the Soy Curls and simmer well for 8 minutes.
  8. Pour into a strainer to cool and dry a little.
  9. Place a pan over medium heat and heat oil and fry the Soy Curls for 5 to 6 minutes each side, until they form a little crust.
  10. subheading: Assemble gyro:
  11. Put the Tzatziki sauce on some pita and layer the lettuce, tomatoes, onions and soy curls. Top with additional Tzatziki sauce and fresh dill.
  12. Enjoy!
