Ingredients
  • 1 lb meatloaf mix (veal, pork, beef)
  •  
  • 2 ½ slices bread, cubed, crusts removed
  • ½ cup milk
  •  
  • ¼ cup cup finely minced onion
  • 4 garlic cloves, minced
  • 1 tsp salt
  • pepper
  • 2 egg yolks
  • 1 oz grated parmesan cheese*
  • 1 tsp dried Italian herbs
  •  
  • Butter for frying
  • Oil for frying
  •  
  • note: I used the salad romano cheese. Used the stick blender to grate it, but left some pieces. That worked out well.
Steps
  1. Soak the bread cubes in the milk, about 10 minutes. Mush it up.
  2. Mix everything but the meat into the bread mush.
  3. Mix some of the meat into mush. Mix it really well.
  4. Add the rest of the meat. Only mix enough to just mix it. Don't overmix.
  5. Heat the butter and oil. Create the meatballs with a spoon and add them to the pan. I make them like frikadeller, flattening them some. If they're going into a sauce, make them round.
  6. Flip the meatballs once. Cook through.
