Ingredients
  • 1 lb. cooked salmon, flaked, or 1 (14-oz.) can boneless, skinless salmon
  • 2 eggs, beaten
  • ½ c. onion, small dice
  • 1 clove garlic, minced or grated
  • ¼ c. all-purpose flour
  • 2 scallions, sliced
  • 2 tbsp. chopped fresh parsley
  • Zest of one lemon
  • 1 tsp. hot sauce
  • ½ tsp. kosher salt
  • ½ tsp. freshly ground black pepper
  • 1 tsp. Cajun seasoning
  •  
  • 1  egg, beaten
  • ½ c. panko breadcrumbs
  • Vegetable, corn, or canola oil, for frying
