Maple Oat and Wheat Sourdough Bread
Ingredients
  • 350 gram bolles wheat flour or homemilled bolles hard red spring wheat (2 ⅔ cups)
  • 130 grams oat flour or homemilled oat groats (1 cup)
  • 350 grams water (1 ½ cups)
  • 80 grams sourdough starter (¼ cup)
  • 55 grams maple syrup (3 Tbsp)
  • 10 grams salt (2 tsp)
  • for topping the crust, approx 40 grams rolled or flaked oats (½ cup)
