Ingredients
  • ½ yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 cups butternut squash, cut into ½-inch cubes
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tbsp maple syrup
  • 1 to 2 chipotle peppers in adobo, seeded and minced 1 tbsp adobo sauce
  • 2 tsp mild chili powder
  • 1 tsp dried oregano
  • ½ tsp cinnamon
  • 1 tsp kosher salt (use slightly less if using salt-added broth)
  • ¾ cup chicken broth or vegetable broth
  • 1 tsp apple cider vinegar
  • Cilantro, avocado and cooked rice for serving
