Baked Potato Bacon Soup

Ingredients
  • ⅓ c. Butter
  • ⅓ c. Flour
  • 3½ c. Milk
  • 2 Large Baking Potatoes - Baked, peeled and cubed (2 cups)
  • 2 Green Onions, chopped
  • 6 Strips of Bacon, Fried and crumbled
  • ¾ c. Shredded Cheddar Cheese
  • ½ c. Sour Cream
  • Salt and Pepper to taste
Steps
  1. Melt butter, Stir in flour
  2. Gradually add milk
  3. Cook and stir until thickened
  4. Add potatoes, and onions. Bring to a boil
  5. Reduce heat and simmer 10 minutes
  6. Add remaining ingredients, Stir until cheese melts
  7. Serve immediately
