Meatloaf Muffins

Ingredients
  • subheading: For Sauce:
  • ¼ cup packed brown sugar
  • ¼ cup ketchup
  • ¼ cup Worcestershire sauce
  • subheading: For Meatloaf:
  • 700 g ground beef
  • ½ cup milk
  • 1 egg
  • 1 ½ teaspoons salt
  • ¼ teaspoon ground black pepper
  • 1 small onion, finely chopped
  • 2 stalks of celery, finely chopped
  • 1 carrot, finely chopped
  • ¼ teaspoon ground ginger
  • 4 cloves of garlic, minced
  • 1 cup bread crumbs
Steps
  1. Preheat oven to 350F
  2. Combine brown sugar, ketchup, and Worcestershire sauce in a small bowl. Add a small spoonful to the bottom of each cup of a muffin tray.
  3. In a large mixing bowl, thoroughly mix the remaining ingredients.
  4. Divide meat mixture evenly into each cup of the muffin tray.
  5. Bake for 30 minutes.
  6. Skim fat from top of meatloaves, then spoon remaining sauce on top and bake for an additional 15 minutes.
