Cole Slaw
loading...
X
This is one of my mother-in-law's hand-written recipe with one very obvious omission, even in the ingredient list - the cabbage itself! I guess she thought any decent cook would know how & when to add it. Still, it caught me by surprise & I had to think about it for a minute - I wasn’t sure if cole slaw had been made very differently in previous days.
That being said, I’m not sure when to add the cabbage. I've added to possibilities.
I also suspect the author may have been referring to dry mustard; I’d experiment with both.
My additions to the recipe are in parenthesis.

Ingredients
- 1 c. - sugar
- 1 tbsp. - flour
- 1 tsp. - mustard (dry?)
- 1 c. - vinegar
- 1 - egg
- milk OR ½-&-½
- (1? head - cabbage {shredded})
- ½ tsp. - salt
Steps
- Mix sugar & flour together in saucepan. Stir in salt, mustard, vinegar, & egg.
- Cook (over low heat, stirring,) till thickened.
- (For really crispy cole slaw, toss sauce with cabbage, milk/½-&-½ when ready to serve. Otherwise, mix sauce & cabbage as soon as sauce has cooked & let it sit for flavors to meld;) then, toss with milk/½-&-½ when ready to serve.
