  • 2 tbsp olive oil
  • 4 white mushrooms, halved and sliced
  • 4 red and yellow peppers, diced
  • 3 shallots, chopped
  • 6 ounces of cooked chicken diced
  • sea salt and cracked black pepper to taste
  • ½ avocado sliced
  • Optional: soft cooked egg
  • Fresh chives to Garnish
