  • 1 tbsp extra virgin olive oil
  • 2 cups cucumber, peeled and diced (from 1 English)
  • 1 cup cherry tomatoes, quartered
  • ⅓ cup crumbled feta
  • kosher salt and fresh pepper, to taste
