Instant Pot Black Bean Soup
Ingredients
  • 1 Onion diced
  • 3 Bell peppers diced
  • 1 14.5oz can diced tomatoes
  • 1lb dried black beans rinsed
  • 6 to 8 cup veggie broth
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp paprika
  • 2 tbsp chili pepper
  • 2 tbsp cumin
Steps
  1. Add ingredients to instant pot
  2. High pressure for 40 minutes, natural release
  3. After pot is depressurized, remove lid. Soup will thicken as it sits or blend half of soup to thicken
  4. Top with any toppings, good over rice.
