Prawn and Ginger Noodle Stir-Fry
Ingredients
  • 150g (5oz) dried medium egg noodles
  • 3 tbsp olive oil
  • 2 large red peppers, deseeded and thinly sliced
  • 1 red chilli, deseeded and finely chopped
  • 8 spring onions, thinly sliced on the diagonal
  • 100g (4oz) chestnut mushrooms, thickly sliced
  • 3cm (1¼ in) knob of fresh root ginger, grated (see tip below)
  • 225g (8oz) pak choi, thinly sliced, keeping white and green parts separate
  • 350g (12oz) raw, peeled king prawns
  • salt and freshly ground black pepper
  • subheading: FOR THE SAUCE:
  • 1 tbsp Chinese five-spice powder
  • 3 tbsp soy sauce
  • 3 tbsp runny honey
  • 2 tsp white wine vinegar
  • subheading: TO SERVE (OPTIONAL):
  • 4 pink radishes, thinly sliced
  • juice of ½ lemon
  • 2 tbsp chopped coriander
