Warming Winter Grain Bowl with Roasted Red Pepper Sauce
Ingredients

  • 2 cups cauliflower florets
  • 2 medium sweet potatoes, small diced
  • ½ cup cashews
  • 1 can garbanzo beans, rinsed
  • 1 small bunch kale, stemmed and chopped
  • 2 tbsp olive oil, divided
  • 2 tsp salt, divided
  • 1 tsp black pepper, divided
  • 1 tsp dried oregano
  • 1 tsp granulated garlic
  • 1 tbsp nutritional yeast
  • Garnish with sesame seeds, nutritional yeast and lemon wedges

  • 3 roasted red bell peppers (jarred or homemade)
  • ½ cup almonds
  • 1 tbsp capers
  • 1 lemon, juiced
  • ¼ cup parsley
  • 1 shallot, peeled & sliced
  • 3 garlic cloves, peeled
  • ½ cup water
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp nutritional yeast
