  • 1 zucchini, halved lengthwise, then sliced into half moons about ½ inch thick
  • 3 tomatoes, diced
  • 1 tsp. salt
  • 2 cups water or vegetable broth
  • 2 handfuls baby spinach leaves
  • 2 Tbsp. toasted slivered almonds
  • 2 Tbsp. fresh cilantro, finely minced
  • 1 lemon cut into wedges
  • Plain yogurt (optional)
