Ingredients
  • I just used a bunch of random veggies with no measurements but I will guesstimate. Can use any veg obviously... :)
  • 1.5 C Quinoa rinsed
  • 1.5 C Favorite Broth, this one pictures was amazing!
  • ¼ red onion
  • ½ red pepper
  • 1 large carrot
  • 1 small or ½ large zucchini
  • Touch of Organic coconut oil
  • Touch of salt and garlic powder (didn't have fresh)
  • Fresh tomato and scallion for garnish
