Chickpea Al Pastor Tacos
Al pastor is traditionally a rotisserie-style meat-based dish with onions and pineapples. Here I use roasted chickpeas as a plant-based replacement. Adding the pineapple and onion to the baking sheet yields caramelized and slightly charred accompaniments to the chick-peas. Adding the seasonings part-way through the cooking process keeps them from burning while still giving them time to infuse.
Ingredients
  • Total Time: 40 MINUTES
  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • ½ red onion, sliced
  • 1 (15-ounce) can crushed pineapple, drained and divided
  • 2 tablespoons liquid aminos
  • ½ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon freshly ground black pepper
  • ⅛ teaspoon ground cinnamon
  • Pinch of ground cloves
  • 12 oil-free corn tortillas, wrapped in parchment paper
  • ¼ to ⅓ cup pineapple or mango salsa
