Grandma Florence’s “Caldwell Birthday Cake”

I love making really yummy, healthy meals that will spark creativity and interest in anyone who eats at my table. Hiding vegetables, or leaving them out in the open, is a favorite past-time! Enjoy!

My Grandma Caldwell made this for my grandpa, my dad and for my uncle and they still love it today!

1 package of yellow cake mix

6 to 8 marshmallows

1 pint whipping cream

1 cup walnuts, chopped

¼ cup brown sugar

Prepare cake mix as directed on package. Pour into two 8" or 9" greased and floured pans. Cut marshmallows in half and place on top of mix, cut side down. Leave a 1" border around the edge without marshmallows. Sprinkle nuts and brown sugar over the top of the cake and bake as directed.

Don't overbake. Take out of over when it still looks gooey. When the cake is cool, fill the middle layer and cover the sides with whipped cream.
