Instant Pot Mexican Corn Chowder

  • 1 ½ pounds boneless skinless chicken breasts or thighs
  • 3 cups frozen sweet corn
  • 1 (4 oz) can diced green chiles
  • 1 (14.5 oz) can black beans, rinsed and drained
  • 1 cup picante sauce, divided
  • 3 Tbsp taco seasoning, divided
  • ½ tsp salt
  • ½ tsp pepper
  • 1 pound russet potatoes, peeled and cut into bite size pieces
  • 4 oz cream cheese
  • 1 red or green bell pepper, diced (optional)
  • 3 Tbsp cornstarch 3 Tbsp cold water
  • Salt and pepper
  • Topping ideas: cilantro, cotija cheese, bacon bits
