Ingredients
- Mini Fruit Balls
- 100g desiccated coconut,
- to roll balls in
- Pineapple (yellow)
- 200g dried pineapple pieces
- 40g desiccated coconut
- Apricot (orange)
- 200g dried apricot
- 20g desiccated coconut
- Cranberry (dark red)
- 200g dried cranberries
- 50g desiccated coconut
- Blueberry (dark purple)
- 200g dried blueberries
- 20g desiccated coconut
Steps
- Place desiccated coconut into a shallow bowl.
- Place dried pineapple and coconut into mixer bowl. Speed 10 / 1 minute
- or until it comes together into a sticky dough. Some fruits may take longer.
- Pour mixture out onto a plate.
- Roll mixture into approximately 20 mini balls.
- Roll balls into the coconut and set aside on a plate.
- Continue the same process for all balls. If you find any of the mixtures to be
- dry, simply add a drizzle of water until they come together.
- Store in an airtight jar in the fridge for up to two weeks.
