  • 3 rosemary sprigs
  • 4 thyme sprigs, plus 2 tsp picked leaves
  • 10 eschalots, peeled
  • 20 garlic cloves, peeled
  • 70g grated pecorino
  • 8 small chat potatoes, boiled sliced
  • 5 boiled eggs, sliced
  • 110g buffalo mozzarella, sliced
  • 16 slices prosciutto
  • ⅓ cup parsley leaves
  • 3 tbs marjoram leaves

  • 8 egg yolks
