Ingredients
  • 6 ounces meaty slab bacon, sliced ¼ inch thick and cut into 1-inch lardons
  • One 4-pound chicken, cut into 8 pieces

  • 2 tablespoons unsalted butter
  • 2 tablespoons extra-virgin olive oil
  • 1 pound shiitake mushrooms, stems discarded and caps thickly sliced
  • 2 tablespoons chopped parsley
