Teochew Steamed Fish
Ingredients
  • 1 White Pomfret (mine was approximately 400g-500g), gutted, scaled and cleaned
  • note: Note: You can also use white-fleshed fish like Tilapia, Grouper, red or white Snapper or Asian Sea Bass.
  • 50g salted mustard green (Ham Choy), soaked and sliced
  • 3 Shiitake Mushrooms (fresh or dried), sliced
  • note: Note: Soaked to soften if using dried mushrooms
  • ½ tomato, cut into wedges
  • 2 sour pickled plums (Ham Shui Mui - photo above), flesh mashed
  • ½ thumb-sized ginger, sliced
  • Julliened spring onions for garnishing (optional)
  • Seasoning
  • ½ teaspoon soy sauce
  • ¼ teaspoon pepper
  • 1 teaspoon sugar
  • 100ml water
