Ingredients
- subheading: Meatballs:
- 500g minced beef (15% fat)
- 15g lemon grass (about 2 stalks)
- 20g fresh ginger
- 1 medium egg white (US large)
- 15g keto breadcrumbs
- salt and pepper to taste
- oil to fry
- subheading: Sauce:
- 20g sesame seeds
- 20ml sesame oil
- 20ml soy sauce
- splash of apple cider vinegar
- hot pepper flakes to taste
- subheading: To serve:
- 400 to 600g broccoli florets
Steps
- subheading: Meatballs:
- Chop lemon grass and ginger then put it in a large bowl
- Add meat, salt and pepper, breadcrumb and egg whites
- Mix well with your hands
- Scoop portions of the meat mixture and form meatballs. Make sure all the meatballs are the same size to ensure consistent cooking times.
- Fry the meatballs in a little bit of oil on a cast iron skillet
- subheading: Sauce:
- In a small saucepan light toast sesame seeds
- Add sesame oil, soy sauce and ACV (and hot pepper flakes)
- Stir and leave it for a minute to reduce
- subheading: To Serve:
- Divide broccoli into "flat" florets and pre-cook them in Microwave for about 3 minutes
- Char-grill broccoli on a cast iron skillet (the same you used to fry your meatballs)
- On a plate put broccoli, then meatballs and pour over the sauce.
- You can garnish it with a little bit of spring onion :)

- I make my breadcrumbs from this recipe: www.reddit.com/r/ketorecipes/comments/8xe3np/ultimate_ket... but you should be able to substitute for almond meal or crushed pork rinds.
