  • 2 ⅔ cups (600 grams) filtered water 95º to 100º F.
  • ½ cup (113 grams) granulated cane sugar *granulated sugar substitutes don't always work.
  • 8 ⅓ cups (1000 grams) bread flour *see Notes
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon sea salt
