Chicken Satay Skilley (Made in 30 Minutes!)

  • ½ tsp kosher sea salt
  • 1 tbsp canola oil - OR vegetable oil OR peanut oil
  • 2 chicken breast - fillet

  • 2 tsp canola oil - OR vegetable oil OR peanut oil
  • 1 ½ cup coconut milk
  • ⅓ cup creamy peanut butter
  • ¼ cup water
  • 1 ½ tbsp fish sauce
  • 1 ½ tbsp low-sodium soy sauce
  • 1 tbsp dark brown sugar
  • 1 tbsp Thai red curry paste
  • 10 0z dry rice noodles - softened(see package's instructions)
