Crispy Ranch Chicken Wings

Ingredients
  • subheading: Crispy Chicken Wings:
  • 18 ea- Chicken Wings
  • 1 ½ Tbsp- Baking Powder
  • ¾ tsp- Sea Salt
  • 1 ½ Tbsp- Ghee

  • subheading: Ranch Dressing:
  • ¼ cup- Sour Cream
  • ¼ cup- Heavy Whipping Cream
  • ½ cup- Mayonnaise (*See Keto Mayo Recipe)*
  • 2 ea- Medium Spring Onions, sliced
  • 1 ea- Garlic Clove, Minced
  • 2 tsp- Dried Parsley
  • 1 tsp- Dried Dill
  • 1 Tbsp- Apple Cider Vinegar or Fresh Lemon Juice
  • ¼ tsp- Paprika
  • Sea Salt & Black Pepper
Steps
  1. Preheat oven to 250°F. Place the oven racks in the lower-middle and upper-middle positions in the oven.
  2. Use a baking tray deep enough to gather the fat as the chicken wings bake.
  3. Line the tray with baking foil to make it easy to clean.
  4. Place a rack on top of the foil.
  5. subheading: To Make the Chicken Wings:
  6. Use a sharp knife or meat scissors to cut the wings at the joints; you'll end up with 3 pieces per wing.
  7. Pat all the pieces dry using a paper towel.
  8. Store the 18 wing tips in the freezer to b=make bone broth or chicken stock.
  9. Place the remaining wing pieces in a large resealable bag or bowl.
  10. Add the baking powder and salt.
  11. Toss to coat on all sides.
  12. Place the wings on the rack skin side up and spread them in a single layer.
  13. Brush each piece with the ghee, then bake the wings on the lower middle rack for 30 minutes.
  14. Then move the wings to the upper-middle rack, increase the temp to 425°F, and bake for another 40 to 50 minutes. Rotate the tray halfway to ensure even cooking.
  15. When done. remove the tray from the oven and let the wings rest for 5 minutes.
  16. subheading: To Make the Dressing:
  17. While the wings are baking, prepare the ranch dressing by mixing all the ingredients into a bowl.
  18. Season with Salt and Pepper to taste and serve.
