Simple Healthy Taco Meat
Taco Meat can be served with tortillas, lettuce wraps, nachos, over zoodles.  Stuff your squash, sweet potatoes, baked potates . . .

Ingredients
  • 2 teaspoons Olive Oil
  • 1 cup Onion, Chopped
  • 1 Jalapeno Pepper, seeded and finly chopped
  • 3 to 4 Cloves of Garlic, minced
  • 2 lbs 93% Ground Turkey (or chicken)
  • 2 teaspoons dried Oregano
  • 2 teaspoons Chili Powder
  • ¾ teaspoon Himalayan Salt (or sea salt)
  • ½ Fresh Ground Pepper
  • 1 to 2 Chipotle-Chile Pepper in Adobo Sauce, finely chopped (to taste)
  • 1 to 1½ tablespoon Adobe Sauce (from chipotle-chile peppers - to taste)
  • 1 14.5 oz. can of Organic Diced Tomatoes (No Salt or Sugar Added)
  • ½ Chicken Broth (or Chicken Bone Broth)

  • 2 tablespoon Doube Concentrated Tomato Paste (if you want your mix a little thicker, is usually skip it to avoid the sugar).

  • Diced Tomatoes

Steps
  1. Add oil to a large skillet ,  heat over medium heat.
  2. Add onion and jalapeno peppers and saute until onion just starting to be translucent.  Add garlic and continue to saute for a minute or two.
  3. Add ground turkey to onion mixture and cook until meat is no longer pink.  Stir frequenlty to keep from sticking and to break up the turkey.
  4. Add all seasonings and stir to mix (oregano - fresh ground pepper).
  5. Stir in chipotle-chili pepper and adobe sauce, mix well.
  6. Add diced tomatoes and chicken broth.
  7. Bring the taco mix to a low-boil.  Mix well.
  8. Reduce heat to a simmer and simmer for about ½ hour.
Notes
  • Serving Size:  1 cup (½ Red, 1 Red and 1 tsp)
