Healthy Cornbread Muffins
Ingredients
  • 1 ½ cups Gluten Free Polenta/Cornmeal
  • ½ cup Plain Flour/GF Plain Flour (if GF)
  • ¾ cup Unsweetened Applesauce
  • Pinch of salt
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ~½ cup Water or Milk of your choice
  • Optional: I added in some ground flax to this batch for a little something extra and it was delicious! Feel free to add in whatever mix ins you feel like.
