Spinach Chili Crisp Noodles
Ingredients
  • 3 big handfuls fresh spinach leaves or 150g baby spinach (use a whole bag)
  • subheading: SAUCE:
  • 2 tbsp Chinese sesame paste*
  • 2 tbsp light soy sauce or all-purpose soy (not dark soy)
  • 1 tbsp rice vinegar (or other clear vinegar)
  • 1 tsp white sugar (or other sugar, or honey, maple)
  • 2 tsp sesame oil
  • ⅛ tsp+ cooking / kosher salt
  • 2 heaped tbsp chilli crisp (aka crispy chilli oil, chilli crunch, crunchy chilli oil), use oil + chili bits,^
  • 1 tbsp EACH garlic and ginger, finely minced
  • 1 green onion stem , finely sliced (or ¼ red onion finely sliced)
  • ⅓ cup coriander/cilantro, roughly chopped (optional)
  • subheading: NOODLE OPTIONS:
  • 140g/ 5oz (2 cakes) instant noodles / ramen noodles or knife-cut noodles (per video) / Taiwanese wide flat noodle
  • 250g/8oz fresh noodles (like hokkien, lo mein)
