Ingredients
  • 1 Tbs olive oil
  • 2 chicken breasts, diced
  • 1 head broccoli, chopped
  • 1 red pepper, chopped
  • 1 carrot, sliced
  • ½ bunch asparagus, chopped
  • 1 small red onion, chopped
  • 1 small red yam, diced (about ½ to 1 cup)
  • 2 cloves garlic minced
  • ¼ cup Dry Ranch Dressing Seasoning (See note)
  • 1 tsp Sriracha
  • ½ tsp salt
  • ½ tsp pepper
Steps
  1. Preheat oven to 400 F.
  2. Toss all ingredients together in a large bowl.
  3. Add everything to a large stone bar pan. If you don't have stone pans, line a regular baking sheet with parchment paper.
  4. Roast for 25 to 30 minutes, depending on how tender you want the veggies.
Notes
  • If you don't want to make your own ranch seasoning, substitute 1 packet of dried ranch dressing mix.
