Ingredients

  • Mixing bowl
  • 1 cup basmati rice-washed and drained
  • 1 ½ large onions sliced thin
  • ½ bunch cilantro, washed and chopped
  • 1 ½ pounds boneless skinless chicken thighs, washed and cut into large cubes amzn.to/2uPjq0G
  • Small handful of fresh or dry mint leaves
  • 1 to 2 dry bay leaves
  • 1 large cinnamon stick
  • 3 pieces star anise
  • ½ teaspoon jeera ( cumin seeds)
  • 4 tablespoons Bombay Biryani Masala (your favorite brand)- we used Mehran
  • 2 teaspoons minced ginger
  • 4 cloves of garlic minced
  • 2 green chilies minced (adjust for spice level)
  • ¾ cups plain yogurt- use our recipe to make your own!
  • 1 teaspoon (urad) turmeric powder
  • ½ teaspoon salt (or per taste)
  • 2 teaspoons ghee- use our recipe to make your own!
  • 2 tablespoons oil (divided into 1 tb each)
  • ¼ cup chopped cilantro for garnish (optional)
  • 2 tablespoons water + ¼ cup water
