Honey Balsamic and Onion Chicken

Ingredients
  • 2 pounds chicken breasts (cut in 2 to 3" pieces)
  • ⅓ C Balsamic Vinegar
  • 1 T Honey
  • 1 T Brown Sugar
  • 1 T Dijon Mustard
  • ½ C Chicken Broth
  • 1 Medium onion, chopped
  • 1 t minced garlic
  • ½ t oregano
Steps
  1. Add Vinegar, honey, sugar, mustard, and broth to the pressure cooker. Stir until combined. Add oregano and garlic. Add chicken to the liquid. Turn the chicken to get liquid on both sides. Top with onions.
  2. Close cooker. Seal. Cook at full pressure for 8 minutes. NPR. (If using frozen chicken breasts, cook for 15 min then NPR)
  3. Remove chicken and shred. Add some of the liquid from the pot to the shredded chicken.

  6. Make a rice, chicken, corn, and black bean burrito bowl.
  7. Serve meat with vegetables as sides.
Notes
  • 4 to 19-17 Served to Jon and Chris. Very good! (Made the burrito bowls using 90 second packets of rice).
