Slow Cooker Jamaican Oxtail Stew
Ingredients

  • 4 sprigs green onions (chopped)

  • 2.5 lbs oxtail (chopped into about 2 inch cubes)
  • 2 medium carrots (chopped into small disks)
  • 1 can lima beans (also called butter beans)
  • 1 medium onion (chopped)
  • 1 Scotch bonnet pepper (seeded and minced, or leave whole if you want an even milder stew)
  • 2½ cups beef broth
  • 1 tbsp ketchup
  • 4 sprigs fresh thyme
  • 2 cloves garlic (minced)
  • 2 tsp cornstarch
  • 4 bay leaves
  • 3 tbsp vegetable or canola oil (plus more if needed)
