- ½ cup finely chopped shallot

- ½ cup roasted red and/or yellow bell peppers, cut into thin strips
- 1 small seedless cucumber, thinly sliced (about ½ cup)
- ¼ cup lightly packed basil leaves, small leaves left whole, larger leaves cut into thin ribbons
