  • 300 g Tipo 00 or all purpose flour (I recommend King Arthur flour)
  • 165 g eggs, cracked weight, about 3 large US eggs (*see notes)
  • 40 g active sourdough starter or fresh sourdough discard
  • Olive oil (*see notes)
  • Semolina flour, for dusting
