Sourdough Lemon Bread
Ingredients
  • 1 cup Sourdough discard
  • ⅓ cup Olive oil (or any neutral oil alternative)
  • 2 Large eggs
  • 1 cup All-purpose flour
  • 1 ¼ cup Sugar
  • ½ tsp Salt
  • 1 tsp Baking soda
  • 1 ½ tsp Lemon extract (measured meticulously)
  • 1 Large lemon (for zest and juice)

  • 3 tbsp Fresh lemon juice
  • 1 cup Confectioner’s sugar
Steps
  1. Preheat and Prepare: Preheat your oven to 350 degrees Fahrenheit. Grease a standard loaf pan (9 x 5 inches) and set aside for later use.
  2. Combine Wet Ingredients: In a large mixing bowl, whisk together sourdough starter, olive oil, lemon juice, lemon zest, eggs, and lemon extract until well blended.
  3. Incorporate Dry Ingredients: Gradually add flour, sugar, baking soda, and salt to the wet mixture, stirring until smooth and evenly combined.
  4. Bake to Perfection: Transfer the batter into the prepared loaf pan, spreading it out evenly. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  5. Prepare the Glaze: In a medium bowl, whisk together fresh lemon juice and confectioner’s sugar until smooth. Once the loaf has cooled slightly, drizzle the glaze over the top.
  6. Serve and Enjoy: Slice the lemon bread and serve it as a delightful dessert or snack, savoring each citrus-infused bite
