Ingredients
- 1 large eggplant
- 500 g pumpkin, cubed
- 2 medium tomatoes, chopped
- 1 large onion, chopped
- 1 ½ cups water
- 1 can chickpeas, drained
- 1 can lentils, drained
- 1 Tbsp garam masala
- ¼ cup fresh coriander leaves
- 20 g oil or water
- Chilli flakes to taste
- 2 cm fresh ginger
- 3 gloves of garlic
- Rice
Steps
- Put the rice on to cook.
- Add the garlic, onion and ginger to the TM bowl. Chop for 10 seconds at Speed 7. Add oil or water. Sauté for 2 minutes on Varoma Speed 1.
- Add spices and all ingredients except chickpeas & lentils. Cook for 20 minutes at 100deg Speed 1.
- Add lentils and chickpeas for the last 10 minutes cooking time. Resulting mixture should by sillier in consistency to a thick dhal.
- Serve over rice and garnish with coriander.
