Fire roasted tomato, grilled chicken, garbanzo soup

Ingredients
  • 2 tsp olive oil
  •  
  • ½ yellow onion, chopped
  •  
  • 3 to 4 cloves garlic, minced
  •  
  • 1 tsp chili powder
  •  
  • ¼ tsp cumin
  •  
  • ¼ tsp oregano
  •  
  • dash cayenne pepper
  •  
  • 14 oz can crushed, fire-roasted tomatoes
  •  
  • 16 oz chicken broth
  •  
  • ½ grilled chicken breast, chopped
  • 15 oz can garbanzo beans, drained and rinsed
Steps
  1. Heat pot.
  2. Add oil.
  3. Saute onion and garlic until translucent.
  4. Stir in first 3 spices until you can smell them.
  5. Stir in crushed tomatoes.
  6. Add broth, chicken, and beans.
  7. Bring to a low boil, reduce heat, simmer for at least 30 minutes so that flavors meld.
