Red Lentil Soup with Cauliflower Rice
Ingredients
  • 1 ½ cups red lentils
  • 6 cups water
  • 4 cloves garlic
  • 1 ½ tablespoons ginger root peeled and grated or minced
  • 1 large carrot (1 ½ cup shredded)
  • ½ cup green or red bell pepper finely chopped
  • 1 large onion chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric
  • ¼ to ½ teaspoon cayenne pepper
  • 12 ounces riced cauliflower (one bag, frozen)
  • ¾ cup canned diced tomatoes and green chilies (such as Rotel brand, see note)
  • salt and pepper to taste
  • 2 tablespoons lemon juice
  • ¼ to ½ teaspoon garam masala
  • sumac optional, to taste
