Marinated Chicken and Veggie Kabobs
Preparation time: 10 minutes- Total time: About 4 hours
Ingredients
  • 4 ounces boneless, skinless chicken breast
  • ¼ cup any Phase 2 dressing
  • 1 onion
  • ½ cup cubed (1 ½ inch pieces) of 6 small whole button or cremini mushrooms
  • ½ teaspoon sea salt
  • ½ teaspoon pepper
  • 1 cup steamed spinach
Steps
  1. Cut the chicken into 1 ½-inch pieces. Cut the onion into 6 small wedges. Put both the chicken and the onions in a bowl. Stir the salt and pepper into the dressing and pour over the chicken and onions. Toss gently to coat and then over the bowl and refrigerate for at least 4 hours and up to 8 hours to marinate
  2. Thread the meat, onions, peppers, and mushrooms on metal skewers and grill over medium heat for 10 minutes, or until chicken is cooked through and vegetables are tender.
  3. Serve on a bed of steamed spinach
