Jen's White Chicken Chili

Ingredients
  • 2 (48oz) jars of Great Northern Beans OR 4.5 cups of dry beans cooked in Instant Pot
  • 2 (15.5oz) jars of medium salsa (use mild or hot if you want to go milder or hotter)
  • 2 cans corn
  • 2 packages of McCormick’s White Chicken Chili Mix
  • 1 large block of pepper jack cheese (or jack for a milder flavor) cut into small cubes
  • 1 rotisserie chicken (deboned and cut into small, bite-sized pieces)
  • 1 red pepper (chopped)

  1. Pour beans, salsa, corn, chili mix into a LARGE crockpot (you may have to split this recipe between two crock pots, because the ingredients listed above fill a large crock pot to the point that it is almost

Notes
  • To fill an 18-quart roaster: 3 giant commercial cans of pintos or Great Northern beans, 108 oz salsa, 105 oz corn, 6 packs of seasoning, 3 rotisserie chickens, extra large block of pepper jack cheese.
