Cranberry Kale Quinoa Salad
Ingredients
  • ½ cup dry quinoa
  • ¾ cup water
  • ½ bunch of kale (approx. 2 to 3 cups chopped)
  • ⅓ to ½ cup dried cranberries
  • 1 cup chopped pecans
  • 1 TBSP unsalted butter
  • 2 TBSP brown sugar
  • ⅛ tsp salt
  • 1 and ½ lemons, juiced
  • 3 to 4 TBSP avocado oil or light olive oil
  • 1 tsp white wine vinegar
  • 1 clove garlic, minced
  • ¼ tsp salt
  • ¼ tsp pepper
  • Optional: crumbled feta cheese, chopped broccoli florets, crispy roasted chickpeas, roasted sunflower seeds, sliced almonds
