Cinnamon Bagels

Ingredients
  • 1 cup lukewarm water
  • 2 tsp bread machine yeast
  • 3 tbsp brown sugar
  • 2 cups all purpose flour
  • 1 cup whole wheat flour
  • 1 tbsp olive oil
  • 1.5 tbsp cinnamon
  • 1 tsp salt
  •  
  • subheading: To boil:
  • 6 cups water
  • 1 tbsp brown sugar
Steps
  1. Add water, yeast, and sugar to bread machine pan.  Let rest for 10 minutes, then add the rest of the ingredients, taking care that the salt lands on dry ingredients (and not the yeasty water below).
  2. Run bread machine on the 'dough' setting.
  3. On a lightly floured surface, divide the dough into 8 equal portions (100g each).
  4. Roll each portion into a ball, then poke a hole in the middle and shape into a bagel.  Place on a baking tray lined with a silicone mat, cover loosely with a tea towel, and allow to rise for 10 minutes.
  5. Bring the water to a boil and dissolve the reserved tbsp of brown sugar in it.
  6. Preheat oven to 400F.
  7. Boil bagels 2 at a time for 1.5 minutes, flipping over half way through.
  8. Arrange bagels back on the tray and bake for 25 minutes, flipping them over after 15 minutes.
Notes
  • Bisect and spread with a bit of Nutella for maximum damage
