I have tried to make restaurant style Mexican rice and have been unsuccessful (it is always too bland or taste like too much tomato), but I finally created a recipe that I am very happy with!
Ingredients
  • 1 Vegan chicken bouillon cube
  • 2 tsp salt
  • ½ tsp cumin
  • Dash of cayenne
  • 2 cups jasmine rice
  • 2 ½ cups water
  • ½ of a chopped onion
  • 1 large beefsteak tomato cubed
  • ½ can tomato paste
  • Optional : 1 tsp minced garlic
