Cold Curry Udon 冷やしカレーうどん
Ingredients
  • 2 cups dashi (480 ml)
  • 4 oz thinly sliced pork (113 g, 6 pieces)
  • 1 eggplant
  • 1 Tbsp neutral flavor oil (vegetable, canola, etc)
  • ½ onion
  • 1 Persian/Japanese cucumber
  • 1 tomato
  • 1 bunch mizuna (or any leafy salad)
  • 2 packages udon noodles (I use frozen udon noodles)
  • 1 boiled egg
  • 1 tsp white sesame seeds (roasted/toasted)
  • subheading: Seasonings:
  • 1 cube Japanese curry roux (1 oz, 32 g)
  • 1 Tbsp sake (I used Takara Sake® Sho Chiku Bai)
  • 3 Tbsp mirin (I used Takara® Mirin)
  • 2 Tbsp soy sauce
