Pumpkin Spice Latte Overnight Oats
Ingredients
  • ¼ cup brewed coffee, chilled
  • ¼ cup milk I use Silk Unsweetened Almond Milk
  • 2 Tablespoons plain Greek yogurt
  • ¼ cup pumpkin puree not pumpkin pie filling
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla
  • 2 ½ teaspoons sugar or equivalent amount of honey, stevia, or sweetener of choice
  • 1 Tablespoon chia seeds
  • ½ cup old fashioned oats gluten free, if necessary
  • 1 teaspoon mini chocolate chips cacao nibs, or pepitas, optional
  • Additional milk if needed
