  • ½ (4 oz.) can Hatch chilies
  • ½ (14.5 oz.) can fire roasted diced tomatoes
  • 5 medium size red potatoes, rinsed, peeled (optional) and cubed into 1″ chunks
  • 2 c. fresh or frozen corn
  • 2 c. cooked, diced chicken
  • 1 c. medium-sharp cheddar cheese, grated
