High Protein Pumpkin Spice Muffins
Ingredients
  • 1⅓ cups vanilla protein powder*
  • ½ cup erythritol
  • ¼ cup coconut flour
  • 4 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 cup pumpkin puree
  • 4 egg whites (or 4 eggs’ worth of egg replacer or flax eggs)
  • 1 tablespoon vanilla extract
