Thai Vegetable Stew
Ingredients
  • 6 cloves garlic, chopped
  • 2 teaspoons minced ginger
  • 1 ½ tablespoons minced jalapeno pepper
  • 3 cups sliced leeks, split lengthwise, separated and rinsed well
  • 2 cups quartered mushrooms
  • 1 cup shredded carrot
  • 1 cup shredded cabbage
  • 2 cups snow peas
  • ½ cup unsalted, natural peanut butter
  • 1 cup vegetable broth, low sodium or no salt added
  • ½ cup unsweetened soy, almond, hemp milk
  • ½ cup unsweetened, shredded coconut
  • 1 lime, juiced
  • crushed red pepper or cayenne pepper, to taste
  • 2 tablespoons chopped cilantro for garnish
