Chicken Noodle Veggie Dish
Ingredients
  • "Panicked Husband Noodle Stew'' (With bonus notes for newbies too!)

  • Wife, Single Mom/Dad, Bachelor Dude/Dudette, College Student, etc. could just as easily be in place of Husband in this recipe's title. The point is it is SO easy, my panicked husband, who has only kind-of-sort-of helped me make one thing in the IP made it with very little help from me tonight. It's his first almost-solo meal run. Start to finish we had a hot meal in 40 mins.
  •  
  • 1 package of bone-in chicken breasts, with skin still on (2 total)
  • 6 cups of water
  • 2 heaping spoons of More than Gourmet veggies stock (or stock of your choice, to directions for 6 cups of water)
  • ½ of an onion (pulled from the fridge, chopped roughly, because we like chunks!)
  •  
  • ½ bag of frozen mixed veggies (the mix for us had carrots, corn, okra, onion, and lima beans)
  • ½ bag of No Yolks Noodles (ours was whole wheat)
  •  
  • Black pepper (6 cranks from the mill, use to your taste)
  • Garlic power (approx a TBS, use to your taste)
  • A healthy dash of paprika (optional, and/or to your taste)
  • A healthy dash of ginger (optional, and/or to your taste)
  • Red pepper flakes - about a TSP (optional, and/or to your taste)
  • 1 Bay leaf
  • Salt (added at near the end, to your taste)
  •  
  • Equipment that made this super-duper fast/easy: a folding steamer basket (nothing fancy, sold in groceries around here for a few bucks)
